According to the Calgary Herald there are now farmers with pigs that have 7.5 grams of fat for every 100 grams of meat. What's next bacon with out the streaky white bits (okay I know it is fat, but I don't want to admit that)? They also have a great recipe at the end of the article, so keep reading.
