Margo from the Good Life Down Under is making bacon, and I believe the results of these recipes should be up by now. She did both a brine and a cure, so it'll be interesting to see how theirs turns out.

Making Bacon

Plans are forming for a Turducken, and I think I might have to try to make my own bacon for the event. Here is a recipe from LA times. Has anyone out there made their own bacon, and any helpful tips?

Making Bacon Down under

On SBS's website you can find a thread called Paddock to Plate and it has many wonderful stories about the farm yard including Making Bacon. There is a link to a bacon making recipe, and lots of good tips. If I can find a smoker I think I might have to try my hand at this. You can check out another thread on their site Mouthful for another way to make bacon if you don't have your own pigs, or smoker.
