Bacon Blue Cheese

One of the surprise bacon dishes at Bacon Day two years ago was Buffalo Wing Bacon. It is incredibly easy to make, if you take the easy way, and why not? Find your favorite buffalo wing sauce and pour over cooked bacon. I'm sure someone could come up with a much better recipe, but why not keep it simple? The one thing we didn't have, though, was the traditional accompaniment of blue cheese dressing and carrots and celery to match. Baked Bacon Blue Cheese Dip Recipe

8-10 slices bacon
1 pkg. cream cheese (softened)
2 cloves garlic (peel and mince)
2 & 1/ 2 Tbsp fresh chives, chopped (I used basil instead)
4-5-0z blue cheese crumbles
1/4 cup half and half

Directions:

Cook some crispy bacon and crumble.

In a pan, saute some garlic (optional).

Mix cream cheese and half and half until well blended and add your chives (optional), garlic (optional), bacon, and blue cheese crumbs.

Place in baking dish, cover and bake about half an hour. (I didn't bake and just served cold, but this would be an interesting option. It reminds me more of a artichoke dip then a blue cheese dressing.)

If you decided to bake it, remove from oven, let cool slightly and pour into serving dish.
